With these leftovers, a frying pan and a little oil or butter, you can transform them into a completely new meal - bubble and squeak.

What you’ll need

  • leftover mashed potato or boiled potatoes
  • leftover cooked vegetables, such as carrots, cabbage, peas and broccoli
  • oil or butter for frying

How to make it

  1. Chop up your leftover vegetables into smaller pieces.
  2. Mix them together with your leftover potatoes.
  3. Season with salt and pepper if you have them.
  4. Shape the mixture into small patties or leave it as one large cake.
  5. Heat a little oil or butter in a frying pan.
  6. Fry for a few minutes on each side until golden and crispy. 

Serve on its own or with a fried egg, grated cheese or baked beans.

Using what you already have

When you go to the supermarket to do the big food shop, you can’t not notice that everything seems more expensive than it did last week.

So if money is tight, it’s really important to make the most of what you’ve already got in.

Otherwise, you’re throwing away perfectly good food and effectively chucking money down the drain.

With bubble and squeak, you’re using ingredients that have been bought and paid for and making sure they don’t go to waste.
