Spring is finally springing and we’re all looking forward to spending more time in the sunshine.

And what can be better in that moment than a cool, refreshing ice cream?

Well, you don’t have to go out and buy an expensive, sugary sweet treat, or use a fancy ice cream maker.

Instead, just bung some yoghurt in the freezer.

What you’ll need

  • a tub of natural or flavoured yoghurt 

Optional extras like:

  • a spoonful of honey or sugar
  • chopped fruit (fresh or frozen)
  • a spoonful of jam
  • a few chocolate chips

How to make it

1.    Spoon the yoghurt into a bowl 

2.    Stir in sugar or honey to add sweetness

3.    Mix in extras like fruit or chocolate

4.    Transfer the mixture into a freezer-safe container. 

5.    Freeze for two or three hours

Alternatively, if you don’t want to add any extras, you can just throw the tub of yoghurt you already have in the freezer.

And there you have it - a simple, homemade ice cream ready to serve.

Do I have to serve it straight away?

No.

Although it only takes a few hours for frozen yoghurt to turn into ice cream, you can leave it for longer if you wish and serve it later on.

But remember it can go quite hard if you leave it in the freezer for a long time.

So it’s a good idea to leave it out for a few minutes before eating so it has time to soften.

Cut the calories

A frozen yoghurt ice cream is a perfect option if you’re watching what you eat but still craving something sweet.

Just make sure you use a fat-free yoghurt, and you’ve got a lighter, healthier snack.

Perfect for using up what you have

Prices are going up in the supermarket every week, it seems, and we’re all wanting to make our money go further.

So if you’ve got a tub of yoghurt in the fridge that’s getting close to its use-by date, or bits of fruit that need using up, this is a great way to make sure it doesn’t go to waste.

You’re using up cheap ingredients you already have in, and you get a treat without spending extra.
